Carrot Cake for Easter


Hi Dears, 

As Easter is coming I brought you a tasty Carrot cake with marzipan decorations (carrots and a little bunny)

Follow the recipe below, and bake it for your family! :D 
Ingredients:
for the sponge cake:
  • 150 g of sugar
  • 50 g (2-3 tbsp) of honey
  • 3 eggs
  • 1,5 dl of oil
  • 150 g ground walnut
  • around 5 carrots (middle size)
  • 250 g of flour
  • 1 tbsp of rum
  • 1 tsp of cinnamon
  • 0,5 tsp of gingerbread spice (cardamon, ginger, cinnamon)
  • 2 tbsp of baking soda / baking powder
  • 1 pinch of salt
for the cream:
  • 250 g of cream cheese (mascarpone)
  • 100 g of icing sugar
  • 100 g of sour cream (creme fraiche)
  • 10 g of vanillin sugar
  • 50 g of melted butter
  • 1 tbsp of lemon juice
+ marzipan, food colors, desiccated coconut to the top, ground cookies to the sides

Preparation:

1. Mix to fluffy the sugar with the eggs. (Don't separate them.)
2. Wash, and rasp the carrots. 
3. Add all the ingredients to the mixture, and mix it well with a mixer.
4. Grease a baking mold with butter, sprinkle it with flour, then pour the mixture in it.
5. Preheat the oven to 180 degree C.
6. Bake the sponge cake for about 50-60 minutes.
7. When it's ready, let it cool down for 15 minutes, then cut it in half horizontally.
8. For the cream cheese icing, mix the mascarpone with the icing sugar then add the sour cream, the vanilla sugar, the melted butter and the lemon juice too. Mix it a bit.
9. Use half of the cream to fill the two layers of the sponge cake, and use the other half to cover the top and the sides, as well.

10. I sprinkled the sides with cookie dust (ground cookies? cookie powder? sorry I don't know what is the exact word for that, regular buttery cookies in ground state) So that it would like real dusty as a carrot land.

11. I put dessicated coconut in a bowl (that had a cover) and I dropped 1 drop of green food color in it, and shaked it, so the coconut became green) I decorated the top of the cake with it in a spiral shape.

12. Then I colored the marzipan to orange and green, and created little carrots.
