Confectionery studies - 4th week

Hi! 
This week we made Sweet bread, pound cake and many more. :)


So this week we learnt to bake the kneaded pastries, which has yeast in them. We  need more time to prepare them, as the yeast needs to activate. 
And we need to knead these mixtures at least 2 times, to give "air" to the dough , and let them rise 2-3 times.

So let's see what we have done... :)

Firstly, we learnt hove to "spin" a sweet bread, that we call "Kalács"
I will share the recipe for that when I bake it at home as well. (Soon :) )
It will be shiny if You lubricate the top with egg yolk, before baking.




We need the same dough to bake little Brioches. "Briós"
It has two kinds, the sweet bread-like :
 

And the little rolled form, with sprinkled sugar on the top.

My group baked pound cake. 

Recipe:
Ingredients: 
  • 50 dkg flour
  • 10 dkg margarine
  • 10 dkg powdered sugar
  • 3 dkg yeast
  • 1 dkg salt
  • 1 dkg vanilla sugar
  • 1 dkg grated lemon peel
  • 3 dkg raisins
  • 3 egg yolk
  • 3 dl milk
  • 2,5 dkg cocoa
  • powdered sugar on the top

You need to mix the margarine with sugar with a mixer. 
Add one-by one the egg yolks as well. Then add grated lemon peel into the mixture. 
Add yeast to the milk, with a pinch of sugar, and add a tbsp of flour to it as well, and wait till it activates.
Pour the flour into two bowls. Add cocoa to one of them. And add 1-1 pinch of salt to them. 
Then, when the yeast activated pour half-half of the milky yeast into the bowl, and knead them well. Add the raisins to the yellow dough. Leave them in a warm place for about half an-hour. 
Then knead them again, and again wait about 20 minutes to let them rise.
Then roll them out, place the 2 dough to one another, and roll them up. 
Grease a pound cake mold with margarine and sprinkle it with flour. 
Place the roll into the mold, and wait again 20 minutes, then bake it in a preheated oven in 180 degree Celsius for about 25-30 minutes.
When it's ready sprinkle powdered sugar on it.

One of the groups baked Cottage cheese sweet bread "Ökörszem" "Bull-eye"
For that we should prepare the cottage cheese cream, the only trick is to add the sugar at the very last point, otherwise the cream will be too juicy and it would soak our dough too much. 



Lastly, we baked Stuffed sweet bread with jam. "Bukta".
Again, I will bake it at home, and then You will get the recipe. :) This is the baking tray with the buktas, we need to cut them up to pieces. :) It's a nice tea-time pastry. :)
