Coffee & Cocoa Cookie Sandwich

Hi Dears,
Last time I brought You an ice coffee,now here's a side biscuit for the morning coffee. 
The upper cookie is coffee flavored, the other is with cocoa and with chocolate, yum! :) I glued them together with cappuccino cream. In a box You can consume it for 2 weeks. (If You don't eat them immediately...)
Ingredients:
  • 350 g  = 1 + 2/5 cup of flour
  • 1/2 tbsp of baking powder
  • a pinch of salt
  • 100 g = 2/5 cup of margarine
  • 6 tbsp of sugar
  • 2 tbsp of vanilla sugar
  • 2 eggs
  • 1 tbsp of rum flavor
  • 2 tbsp of instant coffee
  • 1 bar of chocolate
  • 2 tbsp of cocoa
  • ----
  • 100 g = 2/5 cup of margarine
  • 6 tbsp of icing sugar
  • 2 tbsp of instant coffee/cappuccino
  • 8 tbsp of milk
  • 2 tbsp of cocoa
Preparation:
1. Beat up the eggs, and mix the egg whites with vanilla sugar to get a though foam.

2. Add 6 tbsp of sugar o the egg yolks, mix it well, then add the margarine, the baking powder with the flour, a pinch of salt, the rum flavor, and the instant coffee. Finally the egg foam. Make two pastry balls from it. 



3. Melt a bar of chocolate and stir it to one of the balls, with 2 tbsp of cocoa. 


4. Place baking sheets on baking trays, sprinkle them with flour, and place little pushed pastry balls on them.

5. Bake them for about 10-12 minutes on 180 degree Celsius.

6. Right after You take them out you can stamp ornaments on them if you have any cookie stamper.


7. Then mix the margarine with icing sugar and flavor it with instant coffee, cocoa, and add a little bit of milk to it, to make it softer. This will be our cream between the cookies.

8. Lubricate a chocolate cookie with the cream, and place one coffee biscuit on the top.
