Eszterházy Cake


Hi Dears, and Welcome to the 100. post of Hungarian Food Guide! :D

Let's celebrate this milestone with one of the most popular cakes of Hungary, the well-known Eszterházy cake, that I actually baked for my favorite future to be Mother-in-law's birthday.

It's soft, creamy, and has a lot of walnut in it, which makes it really tasty, and as You can see, on top it has a significant decoration with white and brown chocolate. You can taste it in every confectioneries, but home-made is always better :). 

We have a National Holiday as well today, because it's the 15th of March, the celebration of the Hungarian Revolution of 1848 for democracy and freedom.

So , let's see the cake's recipe...


Ingredients:

for the sponges of the cake:
  • 10 egg whites
  • 150 g = 3/5 cup of powdered walnut
  • 300 g = 1 + 1/5 cup of sugar
  • 50 g = 1/5 cup of flour
for the cream:

  • 5 egg yolks
  • 1 tbsp of rum
  • 130 g= 1/2 cup of sugar
  • 2 tbsp of vanilla sugar
  • 300 g = 1+1/5 cup of margarine
  • 250 ml= 1 cup of milk
  • 1 tbsp of gelatin
  • 200 g = 4/5 cup of whipping cream
  • 50 g = 1/5 cup of walnut
  • 1 package of instant vanilla pudding

  • 1 bar of white & dark chocolate
  • walnut
  • marzipan


Preparation:
1. Whisk the egg whites with sugar, then add the flour and the walnuts to it gently. 
 


2. Place baking sheet on a circle shaped baking mold, and preheat the oven to 200 degree Celsius. Pour 1/5 part of the sponge batter to it, and bake it about 10-15 minutes. Repeat this,and bake 5 sponges. 

3. You can separate the sponge from the paper, if You place it up-side-down, and use a cold wet sponge to smooth the paper, then you should gently pull the paper off the sponge. 


4. For the cream, just mix the egg yolks with sugar and the margarine, and stir it on the oven for about 5 minutes.

5. Then add the gelatin to the milk.
6. Whisk the whipped cream in a separated bowl to get a though foam.
7. Then add the pudding to the milk, boil it, and stir it to get a vanilla pudding.
8. Then gently mix the pudding with the cream, and add the walnut as well, and lastly gently stir it into the whipped cream. 


9. Place one sponge into a circle shaped mold, and lubricate it with cream. Then layer the rest sponges with cream the same way.
10. With the rest of the cream cover the sponges on top, and on the sides as well. (Leave about 3 tbsp of cream for decoration)
11. Melt the white and the dark chocolate (in separate bowls), and pour the white on the top. 

12. Pour a spiral on it with the dark chocolate.

13. With a pin, make some stripes in the chocolate in 2 ways. (That will create those nice decor.)

14. Than I created some circles with the rest of the cream on the edges with star-shaped pastry tip, than I placed some walnuts in the middle of them.

15. With red marzipan I created a beautiful rose to the middle of the cake.
